Cookie Recipe #7

I have been given another very nifty set of cookies recipes (10) from an anonymous person...so here we go and thanks to our sender.
Chocolate Mint Cookies

3/4 c butter not butter
1 1/2 c packed brown sugar
2 T water
12 oz semi-sweet chocolate chips
2 eggs
2 1/2 c flour
1/2 t salt
1 1/4 t baking soda
Andes Mints candies, broken in half

Heat oven to 350. Over low heat, combine butter, sugar & water. Heat until melted & add chocolate chips until partly melted. Remove from heat & stir. Pour into large mixing bowl. Let stand 10 min to cool slightly. Beat in eggs one at a time on high speed. Reduce mixer to low speed & add flour, salt & baking soda. Beat until well-blended. Chill 1 hour (dough is almost liquid before chilling but hardens & is easy to shape after chilling). Roll into balls, place two inches apart on parchment paper-lined baking sheets. Bake for 10 min. Place Andes Mint half on top. Allow to melt slightly & spread with a spoon.
