Recipe Night

Yippee! Finally Friday and on top of that I was given some recipes! On to it we go.
Here are a couple of cold soup recipes my family enjoys.

Chilled Carrot Soup with Tarragon Mousse

6 servings

Ingredients
3 medium Carrots, trimmed, peeled and cut into 1" rounds
2 1/2 cups fresh carrot juice
1 teaspoon butter
1 teaspoon honey
Pinch of Curry Powder
1/2 cup Heavy Cream
Salt & Pepper

For the Mousse:
1/4 Creme Fraiche (or equal parts whipping and sour cream)
1 cup Heavy Cream
3 small sprig Tarragon, minced (or chives or basil)

Put carrots, 1 1/4 cups of the carrot juice, butter, honey and curry into a large pot and bring to a boil over medium heat. Reduce heat to medium low and simmer until the liquid has evaporated and carrots are very soft; about 1 hour. Add cream, increase heat to medium, and simmer for an additional 3 minutes.

Puree carrot mixture and remaining carrot juice in the jar of a blender. Pass soup through a fine sieve into a medium bowl and season to taste with salt & pepper. Cover and refrigerate until well chilled.

For the mousse: Whip creme fraiche And heavy cream in a medium bowl until stiff peaks form. Fold in minced tarragon.

Or you can cheat and use a small spoonful of sour cream with the spice of your choice (fresh or dry) sprinkled on top.

Divide soup between chilled soup bowls and place a spoonful of mouse in the center of each bowl, on top of the soup. Serve immediately.

Strawberry Soup

4 servings

Ingredients
1 cup dry white wine
1/3 cup white sugar
2 cups chopped strawberries
1 cup orange juice

Directions: In a small saucepan mix wine and sugar, and bring to a boil. Let boil for 5 minutes and then remove from heat. Let cool.

Puree strawberries and wine mixture in a blender or food processor. Blend until very smooth and then stir in orange juice. Chill for at least 3 hours before serving.

You can substitute the white wine for a sparkling wine or a fruit juice such as apple or passion fruit.
